Crunchy fried maize

You will need: Maize just taken off the cob, oil, pan and hot water, salt to season

Method:

Soak your maize in hot water for about 40 minutes to an hour, depending on the quantity and year of harvest (the longer maize stays in storage, the harder it will become).

Drain and dry with tea towel.

Heat oil in pan or switch on the deep fryer and cook your maize until almost golden and remove from heat.

The maize will continue cooking even after you’ve removed it from the heat, so it need not be in the pan for too long.

Drain off excess oil and sprinkle salt, to taste. You may add seasoning such as black pepper, chilli powder or paprika to make it spicier if you wish
